No-Bake Protein Cookie Dough Bites

Makes about 12–15 bites

Ingredients — dough

  • ½ cup Evive protein — Shop Evive protein
  • 1 cup almond flour
  • ¼ cup maple syrup
  • ½ cup almond butter
  • ¼ cup coconut oil, melted
  • 1 tsp vanilla
  • 1 tsp sea salt
  • ¼ cup chocolate chips

Chocolate coating

  • ⅓ cup dark chocolate
  • 1 tbsp coconut oil

Instructions

  1. In a large bowl, mix the Evive protein, almond flour, and salt.
  2. Add the maple syrup, almond butter, melted coconut oil, and vanilla. Mix until a smooth dough forms.
  3. Fold in the chocolate chips.
  4. Roll into balls using about 1 tbsp of dough each. Place on a parchment-lined baking sheet.
  5. Melt the dark chocolate with the coconut oil using a double boiler or microwave.
  6. Dip each ball into the melted chocolate to coat evenly.
  7. Return to the baking sheet and refrigerate for 15–20 minutes, until the chocolate is fully set.

Storage

Keep in the fridge for up to 1 week… if they last that long.
