Healthy Date-based Caramel

Craving a rich, velvety, naturally sweet caramel… without refined sugar? This date-based version is perfect drizzled over a smoothie bowl, served alongside fruit, spooned over oatmeal, or eaten straight from the spoon.

Simple, creamy, and made from ingredients you actually recognize.

Ingredients

  • 1½ cups pitted Medjool dates
  • ½ tsp sea salt or Himalayan pink salt
  • 2 tsp pure vanilla extract
  • ⅓ cup melted coconut oil
  • 1 cup plant-based milk of your choice (almond, oat, soy, etc.)

Instructions

  1. Place the pitted dates in a bowl.
  2. Cover with boiling water and soak for 30 minutes to soften.
  3. Drain completely and remove any excess water.
  4. Add all ingredients to a high-speed blender.
  5. Blend until smooth, thick, and creamy.

If the caramel is too thick, add 1–2 tbsp of additional plant-based milk and blend again.

Tips

  • For a deeper flavour, add an extra pinch of salt for a salted caramel twist.
  • Store in an airtight container in the fridge for up to 7 days.
  • Warm slightly before using if it firms up in the fridge.
