Craving a rich, velvety, naturally sweet caramel… without refined sugar? This date-based version is perfect drizzled over a smoothie bowl, served alongside fruit, spooned over oatmeal, or eaten straight from the spoon.

Ingredients
- 1½ cups pitted Medjool dates
- ½ tsp sea salt or Himalayan pink salt
- 2 tsp pure vanilla extract
- ⅓ cup melted coconut oil
- 1 cup plant-based milk of your choice (almond, oat, soy, etc.)
Instructions
- Place the pitted dates in a bowl.
- Cover with boiling water and soak for 30 minutes to soften.
- Drain completely and remove any excess water.
- Add all ingredients to a high-speed blender.
- Blend until smooth, thick, and creamy.
If the caramel is too thick, add 1–2 tbsp of additional plant-based milk and blend again.
Tips
- For a deeper flavour, add an extra pinch of salt for a salted caramel twist.
- Store in an airtight container in the fridge for up to 7 days.
- Warm slightly before using if it firms up in the fridge.
