Almond Butter Protein Dates

The sweet (and nourishing) snack you didn't know you needed

If you often get that afternoon sweet craving but want something simple, quick, and a little more satisfying than a regular snack — you're going to love this. Sweet, melt-in-your-mouth, chocolatey… basically the perfect "useful + enjoyable" bite.

Great for lunchboxes, quick snacks, meal prep, or even a little treat after dinner.

Ingredients

  • 1 cup dark chocolate
  • 1 tbsp coconut oil
  • 1 pinch of sea salt

Instructions

  1. Prep the dates — Remove the pit from each date by making a small cut along the side.
  2. Make the filling — In a bowl, mix the almond butter with the Evive vanilla protein until smooth and well combined.
  3. Fill the dates — Spoon a small amount of filling into each date. Gently press closed.
  4. Melt the chocolate — Using a double boiler, melt the dark chocolate with the coconut oil until completely smooth.
  5. Coat — Dip each date into the melted chocolate and place on a parchment-lined baking sheet.
  6. Finish — Sprinkle a little sea salt on top.
  7. Freeze — Place the baking sheet in the freezer for about 2 hours.
  8. Enjoy — Savour these little frozen bites — they're absolutely delicious.

Tips to make them even better

  1. Switch up the nut butter — Almond butter, peanut butter, tahini, maple-nut blend… they all work beautifully.
  2. Add a little crunch — Before closing the dates, tuck a whole almond or hazelnut inside.
  3. Go 70% dark chocolate or higher — For a richer flavour and a slightly more satisfying snack.
